1. Baked Chicken and Sweet Potato
This is a very healthy dish as it contains both protein and vegetables. It is also a dish that you can bake in just one tray.
- Two red onions (cut into four pieces each)
- Two garlic cloves (sliced finely)
- Four tomatoes (cut into two pieces each)
- Two tablespoons of olive oil
- One-fourth cup of chopped fresh continental parsley
- 650 grams of Chicken Thighs (cut according to your preference)
- 600 grams of Sweet potatoes (peeled she cut into cubes)
The first thing you need to do is preheat the oven to 220°C. In a bowl, add your onions, tomatoes, Sweet potatoes, and garlic. Then add one tablespoon of olive oil to the mixture and combine them. Make sure all the vegetables are covered with the oil. Add some salt and pepper. You can choose to add some other seasoning of your choice if you’re experienced in cooking. After seasoning your vegetables, transfer them to a large baking tray and bake for fifteen minutes.
While your vegetables are getting baked, heat one tablespoon of the oil on a frying pan. Season the chicken with salt and pepper and cool it for a couple of minutes on each side. Again, you can choose to add other seasonings. Once the chicken is golden on both sides, add the chicken to the tray of vegetables and bake for ten more minutes. This will allow the chicken to cook through.
Once the baking is done, add the parsley to the tray. Now, toss the vegetables, chicken, and parsley together to mix in all the flavors. Once that’s done, your baled chicken and Sweet Potato are ready to be served.
2. Oven-baked Mushroom Risotto
The second dish on our list is a vegetarian one. If you do not consume meat, fish, or eggs, you can try making this delicious Mushroom Risotto.
- 400 grams of Mushrooms (of two or three kinds)
- 250 grams of Arborio rice
- 750 milliliters of liquid vegetable stock
- 80 milliliters of white wine
- 250 grams of trimmed broccoli.
- 20 grams of finely grated parmesan
- Two teaspoons of olive oil
- One large leek, trimmed and sliced thinly
- Two cloves of garlic (crushed)
- Two teaspoons of freshly chopped rosemary
Before you start any of the preparations, preheat the oven to 180°C. Heat oil in a flameproof casserole dish over high heat. Once the oil is hot, sauté the leek until it’s soft, and then add your mushrooms, garlic, and rosemary. Stir it for three to four minutes until the mushroom is soft. Add the Arborio rice and stir it all together for a minute. Then add the wine and stir for again one minute. Now, add the vegetable stock and bring it to a boil, but stir occasionally.
After the mixture comes to a boil, cover the casserole with a lid and transfer it to the oven. Bake for fifteen minutes. After it’s done, add the broccoli and bake for five more minutes. Follow that with adding some parmesan cheese and keeping the casserole covered for a cooler of minutes. Serve with more grated parmesan on top.
3. Baked Fish with Tomatoes, Beans, and Olives
This next recipe is for fish lovers. If you want to enjoy baked dishes but don’t want to have chicken or vegetables, this next recipe is just the one for you.
- Four fish cutlets (preferably boneless)
- Two tablespoons of fennel seeds
- Two and a half tablespoons of olive oil
- Three garlic cloves
- One teaspoon paprika
- Half a teaspoon of dried chili flakes
- 400 grams of cherry tomatoes
- 400 grams of canned butter beans
- 55 grand of Kalamata Olives
- 300 grams of frozen broad beans
- One lemon
- Crusty bread
Like always, you need to preheat your oven. Preheat it to 220°C. Prepare a spice mixture by combining fennel seeds (ground), paprika, and chili flakes. Rub your fish cutlets with one tablespoon of oil, and then make sure you cover all the cutlets with the spice mix.
Heat one and a half tablespoons of oil in a large ovenproof frying pan over medium heat. Cook the fish on the pan did one and a half minutes per side. Make sure it’s brown but not fully cooked. Transfer the fish to a plate and keep it aside. Now, add finely chopped garlic until you get the aroma. Then add the sliced lemon and cook it for a minute until it caramelizes. Then add the tomatoes, drained and rinsed butter beans, and Olives. Stir this mixture until it comes to a simmer, and then place the fish on top of the mixture. Transfer the pan to the oven and bake it for five minutes.
Pour boiling water over broad beans and let them stand for a minute before you drain and rinse and squeeze the beans out of their skins. Remove the pan from the oven once it’s baked, and stir in the beans. Then bake it for five more minutes. After it’s done, serve it with bread.
4. Vegan chocolate brownies

- Two cups of unbleached all-purpose flour
- Two cups of white sugar
- Three fourth cup of unsweetened cocoa powder
- One teaspoon of baking powder
- One teaspoon salt
- One cup of water
- One cup of vegetable oil
- One teaspoon of vanilla extract
Preheat the oven to 175°C. Ideally, pick a rectangular baking dish. Then grease it with butter or oil.
For the batter, mix flour, sugar, cocoa powder, salt, and baking powder in a large bowl. Now pour in your liquid ingredients, water, vegetable oil, and vanilla extract. Mix the wet ingredients with the dry ones until you have a batter. Make sure you blend the mixture well to avoid lumps. Then pour the batter into the baking dish evenly. Make sure it has a plain even surface.
Transfer the baking dish to the oven and bake it for twenty-five to thirty minutes. You will know it is done when the surface of the batter is no longer shiny. After it’s done, take out the baking dish and let it rest for ten minutes. Finally, cut them into squares. Serve it by itself or with vanilla ice cream, and enjoy.
